		<description>I'm a persimmon-drying evangalist this time of year. If you have too may Hachiya persimmons to keep around until they turn into water balloons, and if you have access to a dehydrator, try drying them when they're still hard.

Core and peel hard Hachiya persimmons and slice into 4 or 5 slices, depending on how big they are. Dehydrate at 140 F for 18 - 24 hours. The astringint, horrible, puckery tannins that shrivel up your mouth when you eat unripe Hachiya raw, will magically disappear, leaving a sweet dried fruit snack. I can easily fit 12 persimmons at a time in the 4 trays of my dehydrator, so you can get through a lot of fruit this way.</description>
